One of the best local cooking schools -- Dish -- offers a 10-week
“basics” cooking class. The classes were designed for novices and for
those who want to broaden their cooking skills. At the classes, you’ll
learn everything you need to know about knife skills, stocks and broths,
sauteing, braising, basic bread and pastry, frying, sauce making, basic
meat and seafood selection and cooking. At each class, the instructor
will start with an overview of the scheduled cooking technique, then the
class will create a “mise en place” (preparation of the food for each
recipe). Once the ingredients are ready, the instructor will discuss and
demonstrate each recipe to the class. The Basics Class costs $390 and
runs in consecutive weeks at 6 p.m. Tuesdays or Thursdays. The weekly
class covers stocks and broths, classic sauces, sauteing and frying,
braising, grilling, roasting and stove top smoking, poaching, souffles,
savory and sweet, breads and pastries. There are all kinds of other great
cooking classes offered at Dish, and top of the line kitchen accessories
are available in the front section of the school. The retail section of
Dish carries equipment, tools, linens, flatware, tabletop, service
