In Las Vegas, it’s black truffle season. Here are five restaurants to sample

Las Vegas chef José Andrés has declared February to be black truffle month and created a 12-course tasting menu devoted to the aromatic fungi. Other local eateries celebrate truffles year-round. Here are five places to try.
Bazaar Meat
Andrés’ tasting menu begins with pan con tomate, an Italian bread served with fresh tomato and shaved truffle. Then it’s on to barquillo, a Mediterranean dish blending the fungus with chestnut, celery and mascarpone cheese. A later course, called Truffled Shabu Shabu de Toro, features thinly sliced bull sirloin poached table-side in a jamón and truffle broth, and topped with Honshemiji mushrooms.
The tasting menu at the restaurant inside SLS Las Vegas costs $150 per person and is available through Feb. 28.
Guests who want more decadence can add truffle shavings to any dish. Two grams — that’s seven-hundredths of an ounce — cost $25.

Restaurant Guy Savoy
Artichoke and black truffle soup is a favorite at the restaurant at Caesars Palace. Served with toasted mushroom brioche and black truffle butter, the dish will set you back $75.

Libertine Social
A less expensive, but no less intriguing, dish is the black truffle pizza available at Libertine Social inside Mandalay Bay. The pie is topped with Fontina and Parmesan cheese, an egg and black truffle shavings.

Bavette’s Steakhouse & Bar
A European spin on an all-American favorite, truffle mac and cheese is offered at the new Bavette’s Steakhouse at Monte Carlo. This upscale appetizer, priced at $14, features white cheddar and black truffle.

Harvest
Up the street at Bellagio, chef Roy Ellamar is tempting guests at his Harvest restaurant with his farro porridge with black truffle ($23). In this dish, black truffle is blended with the whole grain farro, wild mushrooms and a slow-cooked egg.
