Reader recommendation: Colorado skiing and Pine Creek Cook House in Aspen

I just returned from Aspen, where I had a wonderful day cross-country skiing at Ashcroft. At the end of the first leg of the 3.5-mile course, I was pleasantly surprised to find the Pine Creek Cook House. It is a beautiful modern log cabin, and the food was outstanding. I had parsnip soup, followed by the vegetarian crepe, which was spectacular and delicious. In winter this restaurant is accessible only by cross-country skiing, snowshoeing or horse-drawn carriage. I highly recommend it.
