There is something particularly wonderful about a well-made whiskey sour, especially in the heat of summer when its tart pucker takes your mind off the sweat in your hat band. And a dapper hat is just what you might want to wear to Studio City’s new Black Market Liquor Bar, which looks like a less gritty version of a bar that would have been in the 1959 British film “Look Back in Anger,†featuring Richard Burton as a disconsolate boozer. However, wallow you won’t at Black Market, where a talented bar staff led by Pablo Moix and Steve Livigni are whipping up liquid refreshment on par with some of the best drinking destinations in town. Moix’s Boulevard Sour takes the traditional whiskey sour to fluffy new heights with the addition of an egg white and the bitter Italian aperitif Cynar. The effect is as rousing as cold water in the face, and the refreshment lasts just as long.

Boulevard Sour by Pablo Moix

2 bar spoons of super-fine sugar or 3/4 ounce simple syrup

1 ounce fresh-squeezed lemon juice

1 ounce Cynar

1 ounce rye whiskey

1 egg white

Combine all ingredients in a tin and dry shake to aerate the egg. Add ice and wet shake, then strain into a sour glass. Drop Angostura bitters on top of the foam and swirl it with a bar straw.
