Opaline update
Having just returned from Hawaii for a week and a half, I was shocked to read your Restaurant Journal column about my departure from Opaline in the Oct. 1 edition of The Times. These are the facts: I resigned my position as executive chef. My pastry chef, sous-chef and two line cooks also resigned their positions. All of the members of my staff have secured employment at other restaurants. I am working on opening my own restaurant.
