Ratatouille on the Grill
The grilled ratatouille at Erewhon looked so fresh the other day that I couldn’t help taking some home. Rather than being stewed until blended, as in the usual ratatouille, the grilled vegetables--eggplant, zucchini, onions, tomatoes and bell peppers-retain their identity. They’re seasoned with capers, basil, garlic and olive oil. A batch of lemon herb chicken breasts just delivered from the kitchen provided the main dish. The chicken is flavored with lemon juice, olive oil and herbs, including rosemary. Steamed organic brown rice completed this healthful menu.
