The magazine cover showing Lucques chef and co-owner Suzanne Goin with her bare, messy fingers in a dish of food was disgusting. Why wasn’t she wearing rubber gloves?

I read the entire menu from Suzanne Goin and became almost angry! Regardless of one’s feelings about the efficacies of a low-fat diet, there is surely no one who thinks that one meal should consist of more than 100 fat grams (that was my rough calculation, assuming that the menu served eight). Having lived on a diet of 22 grams of fat per day for the last five years, I assure you that food can be prepared without the addition of a cup or two of olive oil. And it can taste good too!
