Dinner Tonight! : THE LAST MINUTE / DINNER IN 10 MINUTES : Late-Night Stir-Fry

During my internships, clinic sometimes lasted until 8:30 p.m. So dinner had to be late and fast. I often made stir-fried udon noodles. I would start a pot of boiling water and meanwhile stir-fry some store-bought ready-cut veggies in a bag (stir-fry mix, spinach or cole slaw mix). While the veggies cooked, I boiled the udon noodles until softened, about 30 seconds. I drained the noodles and, while still hot, added them to the stir-fried veggies and sprinkled on some of the seasoning packet (from the veggies.) I stir-fried everything a minute longer to mix the seasonings in.
This also works well with bagged ramen or leftover cooked pasta with a little soy sauce and garlic salt for the seasoning. You can also scramble in an egg or two or throw in some sliced cooked meat.
