Wing Ding
This is our house: The 5-year-old is hungry; the 15-year-old has Scouts; Mom and Dad work late.
Dinner? Wings of Fire (frozen), nuked for three minutes on high and arranged in groups of eight on a plate like the spokes of a wagon wheel. (Serving size: four. Repeat as needed.)
A vegetable? Baby carrots out of the bag (or whole ones cut into sticks). Broccoli florets, too. Serve “a la crudite” (raw), with fat-free blue cheese dressing in two bowls (the chicken wings put swirls of hot sauce into the dressing, and Caroline, age 5, doesn’t especially like hot sauce).
Make more wings as needed. Same for carrots (pour out of bag). If really pressed for time, chips; if time is relatively leisurely, frozen French fries can be baked at 400 degrees 12 to 14 minutes.
Dessert: Cookies munched on the way out the door to Patrol Leaders’ Council meeting.
220 calories per serving, 130 of them from fat (OK, feel guilty). 23% of RDA fat, 40% of daily RDA protein.
