“I’ve had the Chave 1995 Hermitage Rouge a couple of times lately. It’s classic Syrah: rich with spice and bacon fat and a lot of complexity, yet really balanced. It’s a super-young wine still, way too young to drink now, actually. But as I discover with most great wines--they taste great any time, even when they’re young. Certainly, when you drink it you think you ought to wait awhile before you open another one, but given the opportunity . . . .”
