Flan Dish With a South-of-the-Border Touch

“This recipe was obtained in Mexico,” Terry Schaefer writes. “It is an authentic Mexican custard and so delicious. I have used this recipe throughout the year. It is always a welcomed dessert.”
FLAN DE QUESO
1/2 cup sugar
1 (8-ounce) package cream cheese, cubed
1 (14-ounce) can sweetened condensed milk
Low-fat or homogenized milk
4 eggs, lightly stirred
Generously grease 2-quart flan pan or baking dish with non-stick spray. Melt sugar in heavy skillet to caramelize. Pour into prepared dish.
Place cream cheese in blender or food processor. Add condensed milk. Fill condensed milk can with low-fat milk and add to blender with eggs. Mix just until smooth and blended, avoiding bubbles.
Pour mixture into prepared pan. Set pan in larger pan containing warm water. Bake at 325 degrees 50 to 60 minutes, or until knife inserted near center comes out clean. Cool and chill. Loosen sides and invert onto serving dish, spooning some of syrup on top. Makes 8 servings.
