From the Culinary SOS archive: Euro Pane’s lemon squares

Mary sent me a letter requesting a recipe for lemon squares from Euro Pane in Pasadena:
‘I’ve made the squares and (they) are destined to be my favorites. However, I have misplaced the recipe and would be grateful if you could send it to me.’
These tangy bars were a definite favorite with us when we ran the recipe back in 2009. We wrote:
‘With a custard that uses more than a cup of lemon juice, there is no shortage of bright, fresh lemon flavor in these wonderful bars, from Euro Pane in Pasadena. Neither too tart nor too sweet, they’re baked atop a crisp but tender shortbread crust, making for a snack that’s hard to resist.’
